Seller potage option

Can anyone please tell me how I choose my own postage option when selling. I am trying to sell an oversized item and want to have compensation included in the delivery option. But ebay is  only giving me 3 options with no compensation.

eBay's simple delivery automatically covers items up to £750.    But if your item is bigger than 61cm x 61cm x 46cm or heavier than 20kg you can opt out of SD to choose your own postage.   The opt-out doesn't work well at the moment but see Rick's workaround on here:
