Seller insisting I don’t use ebay provided label

I recently opened a return request for an item that is not as described. The seller is insisting he arrange collection rather than me using the label provided by eBay. I assume this is  not safe right as eBay will not know that I have returned it?

You are correct.

Unless seller refunds you before collection, you won't have any proof of return.

Use the ebay label & post as normal.

Only difference may be that ebay label is not sufficient if item is too big.

Well I suppose you could agree if he then refunded in cash on pick up, but it would not show on ebay as returned or refunded.

Your return case would then run out of time and close.

I think you would be well advised to use the ebay  method, as once proof of delivery if seller does not refund you can escalate to ebay who will refund at seller’s expense.
