I am posting an item sold for £850 and Royal Mail local post office has quoted me £20 for special delivery insuring an item up to £2500 which I would like to do. However, when I try to print the postage label I am only offered Special Delivery with an insurance value up to £750 which is not enough. How do I ensure I post with the appropriate insurance cover via ebay's website? If I take the parcel to the post office and do it over the counter can I mark the item as dispatched on ebay so that the money is released to me?

Ideally cancel/refund with buyer's agreement, and relist opting out of Simple Delivery, which you can do if item is worth more than £750. Then you can choose your own postage and the buyer can buy and pay again.
If you buy postage at your post office you'll be paying for that yourself. Tnen to add that tracking number you still need to generate the original prepaid label. Afterwards change the tracking via the More Actions dropdown menu or View Order Details > Postage > Track Package > dropdown arrow. That needs to be done on a desktop browser.

First if all money is released within 24 hours so no longer a problem.
Buy your SD at Post Office then edit the tracking number on ebay to show dispatched.
