I got an email saying my refund should be arriving by the 25th (I got this about 5 days ago) and it is now the 26th with no refund in my bank account. I tried contacting customer service but the assistant won't put me through to an agent because apparently I don't have any "open return requests". But I got an email from Ebay saying I should get the refund from the item I sent back.

ebay dates are not always accurate so probably give it a few more days. If you want to contact ebay you can request a callback on here:

Did you open a return request, and was it in time?

I returned the item within a week of getting it, and got two emails saying the item was delivered to the seller and that I should expect the refund by the 25th.

Did this message say something like ..... ' you will receive a refund between 3 - 5 days ' ?
The message is highly inaccurate.
Once eBay notify you the refund is made, being processed, then it's not instantly returned to you, and does go back to original payment source.
If you paid with PayPal it goes back to your PayPal account fairly swiftly.
Paying with a debit / bank card? Can take up to 12 days to appear back in your bank account.
Credit card payment? This takes the longest, up to 30 days to appear back in the card account used.

OK, so you did open a case through ebay.
In that case your refund will arrive, but it takes a while to process after ebay has authorised it.
You will need to be a bit more patient.

Have you escalated case (ask ebay to step in)?
If seller does not refund willingly, sometimes you need escalate case.
