Ive posted an item I've sold today, but royal mail wasn't covering enough so I sent it via parcel force tracked 24. I can't now list my item as dispatched which means it won't automatically do the tracking as delivered? Which wont automatically release my funds? Is there any way around this to resolve this? Was trying to be sensible and have it covered adequately as its a £300 item.

Use a laptop / PC with Chrome and see if you can manually change the tracking this way:

Click on the item sold and top left click on  View Order Details >>  Postage >> Track Postage from drop down arrow and change the tracking.

If it's not possible,  then it will be a minimum of  a 14 day wait for your payout.

Adding to tressygirls advice,the Simple Delivery label you were given covers items up to £750 by eBay so you were covered,you can claim a refund for the unused label here https://www.ebay.co.uk/claims/simple-delivery/refund/seller but it must be made within 14 days of sale
