Posting an item later.

Purchaser has paid for item but requested that I hold off from posting for three weeks as she is away. Am I ok to do this and do I print postage label now?

No, you will get a dispatch defect from ebay, plus the postage label is only valid for 1 4 days and it wouldn't work if you printed it now.

It's best to cancel/refund with buyer's agreement (via the dropdown menu arrow for the item on your orders list) and relist in 3 weeks for them to buy and pay again.
