I listed an item to sell as a bulky post and packing. Not realising until a bid had been placed, the P&P had reverted to Simple Delivery. Unable to revise listing I posted in Q&A for winning bidder to pay for bulky postage. They didn’t. I can’t re-invoice as it’s simple delivery and winning bidder is not responding to my messages when asking if they would like me to cancel the order and fully refund.

Your only options here are to fund the excess postage cost yourself, or to cancel as 'out of stock' (this will give you a defect against your selling account but providing you don't do it again it won't impact your account).
Your buyer can, of course, still leave feedback.
Which listing was it, out of interest? I can't see anything added in any of your recent sold listings about the bulky postage.

In effect you cannot ask a buyer to pay more than is shown on the listing, and you cannot cancel a sale unless buyer agrees, without getting a defect.
I did a dummy listing for a bulky parcel and ebay came up with I think it was FROM £12.97 with DHL. How much did your buyer pay, as I cannot see anything suitable in your sold items.
