PAYMENTS. Buyer wants to arrange courier rather than collect in person

I have just sold an item that I listed as collection only, but the buyer wants to send a courier to collect it instead, which I am ok with. The buyer has paid for the item, but I guess I won't see the money in my account until they send me the code that they would have shared with me when they were collecting it in person. Should I ask for the code before I let the courier take the item so that the money is released? Otherwise they could say their courier never delivered the item etc.

Yes, definitely get the code before handing the item over.

By not collecting in person, it invalidates the money back guarantee, but in the event of a claim you would have to point out to ebay that it was not collected in person.
