Items collected for cash How to mark as paid

Hi, im hoping someone can help me navigate the collection in person malarkey. 

I have a regular buyer, whom I trust completely.  He wins auctions,  when when hes in the area collects them from me ( it saves on postage). How to i mark his items as paid ( theres no doubt in my mind he wont pay) 

At the moment hes getting reminders, as am I.  

I used to be able to "mark as paid" now it is talking about qr codes . It all seems overly complicated.

If you listed with postage you cannot mark as paid or collected.  Even with collection only items ebay have banned cash.  Buyers have to pay online then seller uses QR code or collection number to show buyer has collected item.
