How can I get a copy of every item I have purchased since 2007

In a nutshell, you can't.

You can view your Purchase History going back to 2020.

The list in your My eBay purchase history only goes back to 2020.   You can get a list of titles from your feedback  > Received as buyer.   Or check out your payment provider.
