I recently sold a £500 item which was tracked and signed for which I have proof of but eBay is saying still waiting for delivery

Do you mean you have proof of delivery?

Enter the tracking details into the carrier's website to confirm delivery.

Ebay may sometimes take a little while to 'catch up' - they don't instantly show an item as delivered even though the carrier's website might confirm this.

Ebay will release your funds 48 hours after delivery is confirmed.

So, if the carrier's website shows delivery, AND more than 48 hours have passed, you can contact Ebay Customer Services and ask them to release your funds.
