I'm trying to send my items, there is no way I can override eBay process,

I can not send items I've just sold ! I have no customers details, the postage eBay have charged is not enough, and I can't change it, so I'd be loosing out if I could send the items, I can't find a way to buy pass there listing way and do it myself ?

Your buyers have paid for the delivery labels so, whilst you can send the items out yourself and add the new tracking numbers, you won't get back the cost of the labels (the label refund will go back to the buyer).

Are you sure that most of your sold items won't go as a small parcel?

I went to the post office to get one item weighed, eBay said £3.75, I would
be charged over £6.00, tracked,
Also where you also automatically got the customers address, I have not got
that to send the item, !? Which is the same on all the items I have sold ,?

You could cancel/refund the transaction with the buyer's agreement (via the dropdown actions menu arrow for the item on your orders list) and relist with correct postage for the buyer to buy and pay again.

The alternative would be to buy and pay for the correct postage yourself.   To add that tracking number and mark dispatched  you still need to generate the original prepaid label (it will remain unused). You get the buyer's address then too.

Then add the new tracking via View Order Details > Postage > Track Package > dropdown arrow > Add Tracking.   That needs to be done on a desktop browser.
