Email received today says I can get in touch, except my only options are to talk to an automated bot or to post here, so I am posting here. Ridiculous that there is not a straightforward way to communicate with customer services.
I do not want simple delivery. It is inconvenient for me to work out my postage costs ahead of time. I want to sell my item with free postage and then package it and take it to the post office and pay for it then. I have done this for decades with very few issues.
I will pull all of my listings if, as the email suggests, my listings are converted to simple delivery on the 6th August. I will find somewhere else to sell things and do not need eBay.
I don't know if anyone at eBay actually reads this but it seems the only way to straightforwardly send a message.

For Private sellers Simple Delivery is mandatory, there is no option to go back to how it ' used to be'. Having said all that, do read eBay Announcement today, from eBay News, top left of this page, there's been big changes.
If you ever need Customer Services they are easy to contact this way, for a Call Back option.

Lines open 8 a.m. - 10 p.m. on weekdays
9 a.m. - 6 p.m. on weekends.
Automated agents will be available on chat outside of the above hours.
I recommend contacting CS first thing in the morning as there's more chance of Dublin answering.

You're offering free postage, so can simply cancel the label and get a refund for it and send your items out yourself (this must be by a trackable method and you must add the tracking number to the order).
To process your refund, we'll verify the following:
If your request meets all these conditions, you'll receive a refund for the shipping cost.
