How can I opt out of Simple Delivery when I'm listing an item to sell?

I want to select my own postage method and cost but just can't find how to do this.  I've read lots of suggestions to get away from bl**** simple delivery but nothing works.  Right now I HATE ebay!!!

Simple Delivery is now mandatory for private sellers.
