I sent an offer to a buyer, and at 03AM the offer was accepted, and I was charged for seven of the item, when I woke up and saw what had happened, they had (of course) already been shipped, none of the fields for return addressed this problem, so I clicked ordered wrong item, and explained in the text window what had happened, the upshot is I have to pay shipping, and I can't change "ordered wrong item" even though I didn't.

I'm assuming you sent the offer to a seller. Are you the buyer?
If you've opened a return you need to return the unwanted items at your cost if it was your mistake.
Do not close te case because this is the only one ebay will allow you to open for these items, they won't let you open another.
When you receive the items use the label provided by the seller to return them for refund.
I am also assuming you ordered (mistakenly) all the items as one transaction. If you didn;t, and you ordered them separately, you'll need to open a return for each item.

The reality of the situation is that unless you can show that your order was somehow increased from one remote to seven after you placed it, you will need to return six of them at your own expense to get a refund.
How you could prove this - or even how it could have happened - I don't know. I take it that you've crawled all over the various order forms to look fr the mistake. Sellers can't change the number ordered - there would be no point in doing so anyway, only to have six returned.
Good luck, but unless you can prove a glitch I imagine that eBay will apply the normal conditions for returning unwanted items includng items ordered by mistake.
