When you purchase a car on eBay you can pay for it any way you want that the seller will accept. It doesn't have to be paid through eBay checkout.
The most important thing is to understand that THERE IS NO BUYER PROTECTION WHATSOEVER for vehicles bought here, however you pay and whether by auction or by classified ad. The result is that eBay motors is a magnet for criminals.
"Selling" a vehicle here can be as simple as copying a picture of it and claiming to be selling it. Many members have been conned into paying for entirely non-existent vehicles, usually with promises that it will then be delivered.
Whatever you do, don't pay anything, not even a deposit, until you have seen and inspected the vehicle, checked the paperwork and had an HPI check. Then ideally pay in cash, which is probably the safest method for both buyer and seller.
If a seller comes up with excuses not to accept these conditions, walk away from it. Remember, there are scams everywhere and no protection at all from eBay if you lose your money.

adding to the advice already given -
If the eBay listing offers a way to pay through eBay check-out don't touch it - as already said you have no buyer protection.

No, because all vehicles should be paid cash on collection (or bank transfer on collection if the seller prefers) once the vehicle has been examined and the documentation carefully checked.
