I have sold four things to someone in Australia but they now don't want to us the GSP a shipping method they want me to send via Royal Mail tracked service but I can't seem to amend anything.

No, you'd have to cancel the current transactions (if they've paid a refund will be issued in the process) then relist with direct postage to Oz on the listing(s) for them to buy again. Click on the dropdown menu arrow alongside the item on your sold list and select Cancel order > Buyer asked to cancel.
