I have sold an item, delivery included, however the fee eBay suggested has fallen way short of the actual price to ship so I am going to deliver the item myself.
How do I do this without leaving myself open to "item never received" issues?

At this stage you cannot, that is, cannot protect yourself against an item not received should the buyer claim this afterwards.
The only way to protect yourself, is to cancel the item, with the buyer' s permission , this refunds the buyer. You can then relist it as a Collection only item and after purchase and payment the all important collection code is given, and do not release the item without receiving and adding that code to those order details stating collection.
