First time on here folks, quick question. I'm sure has been asked countless times.
Regarding default postage rates, the cheapest I've been given for my item is £2.70, a medium letter. Thing is, it's not a medium letter. I've been using the smallest padded envelopes available, and it's worked fine.
Can I not add this cheaper service, or is it what eBay deem to be right for what I'm selling?

Are your items under 100g ? There is currently a long standing tech issue for lightweight items, as they should be exempt from Simple elDivery, but this is just not showing up for sellers! 🤔

There is no such thing as a medium letter.
The maximum thickness for a letter is 5mm. That would be an envelope with a letter in, a postcard, a flat birthday card etc. I am not sure a padded envelope, even with no contents, would fit through the smallest slot at the sorting office - most Post Offices have a template you can use to check.
You are being charged for a Large Letter using a tracked service. That is items over 5mm thick and up to 2.5cm thick.
