How do I change the listing to give cash on collection as an option

Ebay don't allow cash on collection.

Your buyer will have to pay through Ebay checkout and you won't be able to exchange contact details until they pay.

You don't, unless it's a motor vehicle or similar.

Otherwwise, eBay no longer allows items to be sold for cash on collection. The buyer must first pay through eBay's checkout before any contact details can be exchanged.
