I sold an item and was on holiday so missed the message and send by date. The buyer appealed and i apologised and sent item but forgot to track, she has acknowledged receipt but because Ebay went in her favour case is closed and i have to recover the payment which she is not sending. Ebay wont let me reopen the case! What do I do?

Looks like your buyer opened a case for item not received, and yes with no tracking to show the item was delivered, the case would close with a refund to the buyer.
Now that you sent the item when the case was closed, nothing eBay can do to enforce the payment, better idea would have been to relist the item.
You now are relying on the buyer's honesty to repay you with a cheque, bank transfer or a PayPal Friends and Family payment, or you can send them a PayPal invoice, but there's nothing to enforce the payment now.

You will have to send the buyer another friendly, polite message.
Stress that you have not received their payment and it is you who is out of pocket - buyers often think they are refunded 'by Ebay' and not the seller.
Ask they if they would like to return the item or pay you.
Make sure you offer ways to enable them to do either - you will have to send them a prepaid label for a return or provide your bank details so they can pay.
Nothing can be done through Ebay after the refund has been made.
