had a buyer that asked for more photos to be sent via their email address. They then sent a badly mocked up 'paid' email using a fake 'ebay' account address. How do we report this to Ebay or do I just got to the police.

eBay will have read those messages and they do act quickly. You will not see any action they have taken on that buyer's account, they could quite easily have received buying restrictions or even a total ban. If you like report it all to Customer Services too.
This is the easiest and quickest way to contact eBay Customer Services, for a Call Back option.
https://www.ebay.co.uk/help/eua?id=5275&mkevt=1&mkpid
Lines open 8 a.m. - 10 p.m. on weekdays
9 a.m. - 6 p.m. on weekends.
Automated agents will be available on chat outside of the above hours.
I recommend contacting CS first thing in the morning as there's more chance of Dublin answering. Wait a little today, the lines for Dublin hopefully, open soon at 8 a.m.

For the future, never correspond outside eBay as that's the way scams are set up.
Keep everything in eBay messages as 'private' Emails cannot be accessed by eBay.

That was going to happen.
For future reference, all communications must be kept within eBay - you can add photos to an eBay message.
Be on the alert now for more scam emails.
