I placed a camera for sale and was bought on buy now within minutes and have currently seen this buyer used the system so how do I stop the process?

Not quite understanding your post, but the camera collection you sold , sold to a winning bidder, to to a Buy it Now price.
There was one bid and it was sold for £550 plus free postage.
When a bid is placed the Buy it Now price disappears and the sale runs on in auction style in fairness to the other bidder(s).
That's why it is essential to always start your auction for the lowest amount you are happy to receive, it cannot sell for ess. If you receive only one bid, which often happens, you will have achieved the price you wanted.

You have sold, if you didn't want to sell why did you have a BUY IT NOW price.
So long as buyer pays, you honour the sale.

I also can't see a problem here.
You set up an auction style listing with a start price of £299 and added a Buy It Now feature of £550 (see screenshot below), so somebody bought your camera at the Buy It Now price you set of £550.
