You cannot as a Private seller. There is a Time Away feature eBay have, but personally I think it's best just to end all your items in good time before you go away to deal with any refunds / questions, then you can relist them when you come back.
Ending the items they will go into your unsold listing for 60 days if you're still on My eBay Selling and for a maximum of 90 days if you're on the Seller Hub, just relist from there.
