When posting out an item as a seller, does the item have to have a "signature" to prove delivery, or just be fully tracked??

Nope it does not have to have a signature.
It needs a tracking number , or if the item is larger than letter size, and is under the valeu of £20.00 on the proof of posting is a 16 digit number. It is not a tracking number as such, but it can show if an item has been delivered, so it is sufficient to enter any case if necessray. No need here, to pay for that extra tracking.
Keep those proofs for 13 months. There is something called a charge back for unauthorised use of a card, and can be made by a buyer up to 12 months after purchase. proof here the item was posted, is all you need not to refund.
