Recently started selling and put the lowest amount I would take for the item. A few times items have sold for less so I cancelled the sale.  What am I doing wrong please.

sounds like you are confusing the 'make an offer' lowest amount you will accept with the lowest amount you will sell for,

when you have make an offer enabled on your listing you can set a minimum offer amount you will accept,

as soon as a bid is placed this option is removed and the item will sell at whatever price the bidding reaches

so you need to set your start price at the minimum you are willing to sell for

if you cancel sales you will still be charged the final value fees and will get a defect on your account

You have also been using reserves, 4% fee for this is payable even if does not sell. As said, start at minimum you will sell for.
