Offer received after auction has finished

I have been made an offer for my item after the auction has finished. How do I accept the offer and sell the item without violating the selling outside ebay policy?

Simply relist the item buy-it-now at the price agreed and invite them to buy but be aware that they aren't obliged to follow through.

You list the item again at the price that has been agreed and notify your buyer so that they can bid or buy. If you relist as a auction with the starting price as agreed you can end the listing as soon as they bid to 'sell to the highest bidder.'
