I am still having issues linking Nectar with my eBay account, although I have changed my address to a UK one.

Despite changing your Based Location address to the UK, your account remains firmly Registered in the USA and until you are both Based and Registered in the UK site, you cannot qualify for Nectar points until you transfer your .com account to the UK >

Easiest way is to contact Customer Services and ask that they transfer the account Country of registration from the USA to the UK site whilst on the phone ... the given link often does not complete the transfer without CS input >
