Select Fixed Price/Buy It Now only (not auction) during the listing process then you'll see a box for quantity of items.
You may need to use the advanced selling form, not the quick one. If so and you're on the quick one after clicking on "Sell" look in the top righthand corner and you should see the link to switch.
