Cash on collection? If I sell an item and get paid cash how does eBay take their cut and how much

eBay charge their seller fee the second an item sells and not when the buyer pays you.

They charge 10% seller fee,  and you pay 2.9% plus 30p  per transaction to Paypal,  if a Paypal payment is made.  With a cash payment only the eBay fee is charged.

Under Managed Payments the total fee is 12.8% .
