Home-made quiche for me!  And two more for the freezer.  A successful bake, unlike last time, when I had to throw all of them away!

Ed, this might make you smile: I was going great guns on the quiches last time; I had 4 on the go.  However I was over-zealous in my pricking of the pastry bottoms before I put the filling in.  The flan tins I used also had perforated bottoms, and in my zeal I made holes right through the pastry.  I didn't notice at first. By the time I did, the oven and half the kitchen were lightly washed with a beaten egg and cream mixture.  It was a BEGGAR to clean up.

a little tip .when part baking the pastry case do not prick it but get a square of fiol and scrunch it up into a circle and lay in the bottom of pastry case..simples...

Thank you, Cookie!  Today I experimented with baking beans. Just wasn't sure whether to use foil or parchment with them.
