Onion soup?

I've got a couple of large onions past their sell by date - 1st. but they're perfectly good so I don't want to throw them away - I hate waste.

 

Anybody out there know the recipe for white onion soup without buying too many herbs which I'm unlikely to use again?  Most of the recipes I've seen are for red onion soup.  Thank you.

Just roast them Fred ....................... yummy with a bith of gammon or a roast dinner

Never knew onions had a sell by date! as long as they are hard and white when you cut them they are ok. If they are going soft and yellow bin them... or bin the soft yellow bits!

Mmmmm!   Can't wait to try it!  Going back in to it in a few minutes to write out the recipe.  I love home cooking because you know exactly what goes in to it, not like a tin of soup that contains totally unpronounsible ingredients.  I might try baking them as well as somebody suggested.  Thanks, everybody.

Onions would never be binned in this house - just peel, chop and freeze. The frozen onions can be used straight from the freezer, no need to thaw.

 

This is the scrummy recipe that we use for onion soup:

 

1lb onions, 1 oz butter, 1 tablespoon flour, 1 pint chicken or vegetable stock, half a pint of milk, salt and pepper, 1 tablespoon parsley (optional).

 

peel and chop 1lb onions - chop fairly fine, about half inch dice.

 

melt 1oz butter in a large dish / bowl in the microwave

 

add the onions to the melted butter, and microwave on full power for 3 minutes.

 

stir in 1 tablespoon flour, then add 1 pint hot chicken or vegetable stock (stock from a stock cube is fine).

 

add salt and pepper and if you have it 1 tablespoon chopped parsley - dried parsley is o.k., but it will be fine without the parsley

 

Microwave for 10 minutes on full power.

 

Allow to cool for 5 to 10 minutes, then blend with a stick blender until you get the required texture. If you do not have a stick belnder you can use a liquidiser or a food processor, or just leave it if you like chunky onions.

 

Add half a pint of milk and warm gently - do NOT boil.

 

Makes a lovely soup, really thick and creamy. If you do not want to use the microwave it is still really easy on the stove top.

French onion soup is very easy to make and absolutely delicious....

Just fry the onions ( cut into rings ) in butter and oil until they start to caramelise . Add some garlic, lots of pepper, a little salt if you wish beef stock cubes and boiling water . You could add a splash of red wine if you have some to hand .

Just cook it until the onions are soft . The soup will thicken itself ...no need to add flour .

Serve with crusty bread with cheese melted on top .

I have a couple of onions myself ....think I might make some too....

Mmmmmmmmmmmmmm sounds yummy, I love onions.....................we never throw onions or mushrooms away, just slice and freeze, use for stews, casseroles, chillis, spagy bol. I also slice or chop tomatoes and freeze if they are on their way out, ideal for casseroles ........rubbish on a sandwich.
