I don't really fancy it, but I let it defrost two days ago so I have to roast it or it would have spoiled in the fridge.
How I do roast chicken is, I line a deep tin with turkey foil and put a wire rack on top. The foil is to collect the drippings for dipping.
The rack suspends the chicken so it gets crispy all over. Before I roast, I place the chicken in a bag and massage a little all purpose seasoning, salt, toasted sesame oil and all-spice into the skin.
All those spices end up in the dripping which I use as spicy dip in a separate dish. Or sometimes I shred the crispy chicken and pour the spicy dripping over it to put the juicy fats back. If i do roast potatoes, I microwave them first and then quarter them to get them extra soft on the inside when the chicken's ready

I buy a spit roast chicken from Waitrose and then microwave fresh veg lol 🙂

I buy 1.5Kg of chicken breasts from Iceland for £5. Then I take out just what I need and roast it. No waste, no bones.

The chef at work's canteen gave me 200 packets of Knorr Japanese Miso soup with noodles and shiitake mushrooms. They were a few weeks out of date, but dried soup dosen't spoil. He was going to throw them away if I didn't take them, so I got a black bag and took the lot. I can't stand seeing food go to waste. I eat a pack or two after work each day. Each pack makes 700ml of soup
