I’m really confused I’ve just sold an item and they obviously paid the postage which was 91p no issues but as I went to sort the label out it’s then asking me, as the seller, to pay an additional £2.69 postage which basically means I don’t make any money off of
the sale. Has this happened to anyone else and how did you sort it please

The item was listed with Custom Delivery - so you would have accepted the 91p you listed it with.
Given you have some items listed with Simple Delivery (where you would be supplied a label) - Custom Delivery works differently.
91p will have hit your ebay balance with which to purchase postage. You don't have to purchase that postage from ebay PackLink (which is where you are seeing the £2.69). I would suggest checking your other listings and move to Simple Delivery on all your listings.

Yeah all of mine I use the simple delivery which I’ve double checked but it’s still asking for the 2.69 I’m just really confused about it.

When you go to buy the label through eBay the system automatically defaults to 'Large Letter Up to 1Kg' (the smallest size for the Tracked services) and shows the cheapest option for that size. You should be able to alter the size to 'Letter Up to 100g' (tap on the pen symbol next to the size) and then you should see the correct price for Royal Mail Standard Tariff .

They aren’t all simple delivery though and that is the issue.
the one you sold wasn’t so it’s defaulting to use EBay’s suggested postage.

eBay, in all their wisdom, when they decided to allow some letter and large letter size listings under £20 to use custom delivery they also set custom delivery as the default. (It can also happen if you use 'Sell one like this'.) I've noticed many sellers caught out by this. Basically if you have postage on a listing that is below £2.70 (~£2.24 for Click & Collect), then it cannot be Simple Delivery, as there are no SD postage costs below this amount.
With custom delivery you set the postage amount (whether you realise it or not) and the buyer pays that amount to you. You are then responsible for purchasing the correct postage from whomever - either within eBay, a stamp or from the Post Office etc.
