The seller is entitled to get everything back and give a full refund. If they are unwilling to offer a partial refund your alternative is to keep all the items and leave it at that. ebay will not enforce a partial refund.
That's assuming they were all bought in one transaction. If they are listed separately on your purchase page you can open returns for individual items.

the items was in 3 parcels and all mixed up in bits sellers wants me to send all 3 parcels back but think this is a bit to much could I not just return the items that was not described.

If the seller wants all the items back then that is what you must do. it's the only way you'll be refunded.
Your seller will have to pay for the return label.
