How do I arrange for an auction item I have won to be collected by a carrier and delivered to me?

You don't - collection items are for personal collection by YOU. If the seller was happy to package an item to withstand courier delivery, and wait in all day for a courier to arrive, they would have offered courier delivery on the listing, and priced for that option accordingly.
If it wasn't offered in the listing you could ask the seller and guarantee to take responsibility for any damage or loss in transit. That would mean you'd have to pay by bank transfer not paypal.
Unless the seller specifically stated in the listing that you could arrange for a courier to collect the item then you will have to collect it yourself. Should you be unable to do so then you will have to request a cancellation of the sale. If the seller stated "Collection In Person Only" in the listing and you sent a courier to collect the item on your behalf you would automatically void your eBay Buyer Protection and would not be covered in any way should anything go wrong. Therefore, collect the item yourself - that way you can inspect it thoroughly before you decide whether or not to hand over the money for the item. If it looks OK then hand over the cash and bring the item back with you; however, if you change your mind you can let the seller know there and then that you no longer want to buy the item and he/she can just cancel the transaction, after which he/she will be free to relist the item again.
Collection items should be collected in person and paid in cash when satisfied.
IF the seller allowed collection by a Courier, YOU are responsible for the Courier and any loss or damage is down to you to sort out with the Courier. There is NO MONEY BACK GUARANTEE whatever the condition of the item when it arrives, so NO RETURNS are possible.
As a eBay member since 2014 I'm sure you know the rules.
Unless you have made prior arrangement with the seller to package the item and await a carrier then you are totally in the wrong.
