I sold an item and selected courier collection. I chose a date and it
apparently went through but there's nothing in my account to say that it
was booked or that it's awaiting collection. I haven't received an email
either. If I go to my Selling > Or...
If I set the price as 79.99 and then preview the listing, it will show
the buy it now price as 79.99. But when I publish the listing, the buy
it now price goes up to 83.89. Why does the preview show the wrong
price?

Yes I had to set the price at 76.24 to make the buy it now price 79.99.
The preview should show the price paid, it's unintuitive that when you
publish it shows a different price to the one displayed in the preview.
