Hello,
Which couriers can I send an iPad with and not fall foul of the battery restrictions imposed by most, it seems a bit of a can I/can't I scenario.

You have it listed as RM 1st Class. Compensation for 1st Class is £20.00. You need to use RM Special Delivery to be fully covered against Loss or Damage in Transit.
The Battery is integral so shouldn't be any problem.
But you have decided how to send it - your listing says Royal Mail 1st Class. You can't change your mind after someone has bid or bought it, as the postage method is part of the seller-bidder-buyer contract. You can certainly buy an upgraded and properly-insured service, which you absolutely must do, but it must be a Royal Mail service (Special Delivery Next Day Guaranteed in this case), and the extra cost will be at your expense. You cannot ship with any other carrier.
Bear in mind too that listing with a totally inappropriate postal service makes you look very inexperienced, which makes the item an even bigger scammer magnet than it already is. Criminal gangs trawl Ebay and the web looking for inexperienced sellers of electronics and other valuable items, so best to do your homework before you list in future, to ensure that you include the correct postal service.
