A few buyers have asked for a WhatsApp walkaround to get a better look at the bike. I understand that it is against eBay policy to have contact outside of the platform. I can't add additional video to my listing. Is there nothing I can do?

You need to have set the listing up in the first place using the quick sell listing tool, which offers the video feature, in order to go back in and revise it to add one. So, if you go back into your listing can you see the Photos field located at the very top or does it start off with Title?
To be honest, the cheapest and best format to sell a vehicle on is an eBay Classified Ad. This also cuts out the time wasters and non-payers.
A Classified Ad costs £19.99 and there are no final value fees if you sell your item.
Your listing runs for 30 days, during which you can arrange for potential buyers to come and view your bike, you can then end the ad once paid. You can accept offers too (you don't accept the offer until the buyer has been to view first).

If you list in auction format or fixed price Buy It Now it will cost £14.99 for your listing, and that fee is payable even if your item doesn't sell or you end up with a non-payer, and if you sell your item, there are final value fees of 1% of the final transaction (min. £25, max. £45).

Why can't you add a video to your listing? Is it because the file would be too large?
Make sure you use 24 photos and clearly show any issues of hard-to-see areas. A short video of a key area might be better than nothing.

Make the listing "Collection Only".
The prospective buyers do not realise they are making themselves vulnerable. You could send them a video of a similar but even better bike, make the sale, and when they complained to eBay, all eBay could view and action was what you uploaded to eBay: the bike you sold was the bike in the pictures in the condition shown in the pictures and described in the listing. It could be hard for even the police to tell that the gleaming model in the WhatsApp was a different bike.

eBay won't get involved in vehicle sales and payment should never be made or accepted through eBay checkout.

You really shouldn't be telling sellers this, it's dangerous advice.
Sellers CAN'T accept payment for a vehicle via eBay (there is no way to pay for a vehicle via eBay checkout), and one of the biggest scams with payment for vehicles is the buyer saying that they've paid via eBay and sending a spoof payment email.
Payment for vehicles should be cash on collection or online bank transfer on collection, they're the only two safe payment methods that can't be reversed.
