Simple delivery cannot possibly suit everyone and everything sold on eBay despite management’s wishful thinking. Here’s how to opt out (at least until they change it again).
Below ‘DELIVERY DETAILS’ is ‘Package Size’. Clicking in the box brings a pop-up headed ‘Package Size’. Scroll down to the bottom using the slider bar on the right to ‘Don’t see your size’ and click the radio button that says ‘oversize’, then click DONE below it. That clears eBay’s postage options and this method was confirmed as the way to do it by an eBay rep on the phone.
Then under ‘DELIVERY DETAILS’ you can create your own postage policy (use eBay’s info on how to do it – it’s not that difficult).
Management is paid to come up with money-making ideas which is why they don’t want to make it easy for us to opt out with a button that says OPT OUT OF SIMPLE DELIVERY. No doubt they’ll change the above route one day.

Yes, Sellers have been using the oversized route you describe. Also using the over-priced route as well. And now with eBay giving an opt out for £20 and under items, Sellers are marking these as SD Large Letter to engage Custom Delivery where they can use any size/weight of postage as well.

Neither oversize nor overpriced is working for what I'm trying to list. I'm asking £50 for an ice axe. Because it's classed as a bladed weapon, I can only post it (no collection) by a method requiring the buyer's age verification. I first tried setting the price stupidly high and that enabled me to select an appropriate delivery method, but as soon as I reset the price, it reverted to SD and I lost my other options. I then tried oversized but none of the delivery options included age verification. Aarrgghh!
