Can I turn off 'Simple Postage' as that system is not giving me proper cover. I want to pay for the delivery and therefore have more control

You can only opt out of Simple Delivery for large letter items under £20/100g (exc buyer protection fee), but it's only in some sub-categories and you won't know for sure until you list something. If the custom postage option doesn't appear then it's not eligible to opt out.

You are covered for items sold for up to £750.

You are also covered if the item is lost in the post or arrives damaged.  Ebay will deal with claims raised by the buyer if the item doesn't arrive or arrives damaged.

if I sell 2 or more items why does buyer pay 2 or 3 times? if item is valued at £60 and sold for a tenner why can I not claim for £60 from the carrier? If I buy postage I have more control and buyers do not get overcharged.

That's one of the big drawbacks combining postage is just not wholly possible.  It can be managed if the buyer places the items in the basket first,  then goes to eBay checkout to pay.

 

If a buyer pays you individually for the items,  that is 2 postages,  you could with the buyer's agreement cancel the orders, this fully refunds the buyer, citing ' Buyer Requests to Cancel.  Then relist as one item, for them to buy and pay again.  You have one listing,  one important tracking, and items as @jckl1957  explained above, are covered for £750, though check categories for any exemptions here !

 

You can post together, buyer would receive an automatic refund for the unused SD label they paid for, but, here you have no tracking for one item, new tracking cannot be added, and on paper,  the buyer if dishonest could open a case for item not received, and you'd have nothing to prove otherwise!
