I sell chairs and tables, and the only option offered by eBay is Simple Delivery, which doesn’t allow me to change the courier or the price

if your items are extra large you can opt out of SD and choose your own postage.   See the advice on here:

You need to reconsider your account status.

Private accounts are only for those getting rid of unwanted personal possessions.   Business accounts don't have Simple Delivery.
