Cancelling order without agreement of buyer will get you a defect which seriously damage your ability to sell. Ebay expect a defect rate of 2%, but with low number of sales in last 12 months you would be over 2%.
Seller is expected to get postage weight correct, buyer can only pay what is on the listing and cannot be asked to pay more.
You should honour the sale and learn from your mistake. Failing to honour sale also risks negative feedback, and again with a low number of feedback, your feedback % would not look good to potential buyers, when DSRs show after 10 feedback received.

You can't change the weight. You'd have to cancel and relist. See if the buyer will agree to that.

The speakers don't seem to be listed with simple delivery only Royal Mail Tracked 48 so you could get the correct label and send then add the tracking as normal.
You wont be able to charge the buyer any extra
