You can't do anything without the code. You can ask the buyer to message it to you then enter it in the order details. Or just leave it.
But if its your current listing the buyer should have used it to buy. You will have to end it via the dropdown menu next to the item.

It's not ebay, or Ebay's processes that is the problem here.
Getting the collection code off a buyer is extremely important for the seller, it helps with ebay seller protection, payment, and closing off the sale in the seller's account.

What is stupid about it, unless you the seller deals with a collection item in the correct way, then the buyer could collect and then open a not received case.
The code is the only way for you to prove that item has been delivered.

What an unplesant and shameful reply to a fellow user who is just giving their time to help other users understand how eBay works.
Just for the record, answers here are not just for the questioner's benefit, they are archived to help anyone who searches for information on the same subject.
The collection code is one of the few things has done to make eBay safer for sellers. Previously, eBay insisted that sellers must accept PayPal even when items were sold for collection. The result was that, without proof of postal delivery, dishonest buyers could collect an item and then get a full refund by claiming not to have received it. We spent a lot of time suggesting how sellers could try to reduce this risk, for example asking the buyer to sign a collection receipt, taking a photo of them collecting it etc.
The collection code has thankfully removed this risk, provided of course that the seller gets it from the buyer when collecting. Some might say that it's stupid not to, because at well as putting the seller at risk of buyer fraud it will also delay the release of their payment because as far as eBay is concerned the item has not been collected.
