Gold is not covered by Simple Delivery's seller protection for loss in transit so I assume you can opt out of it when listing and choose your own postage, eg. Royal Mail Special Delivery.   If you have problems opting out follow the advice on here:

Thank you for your reply, your link is to a different topic. I thought simple delivery covered items up to £750 but couldn't find where it specified no gold.....

That link is a means to an end, ie. how to opt out of SD.    Regarding gold items -  on here:

https://www.ebay.co.uk/help/selling/posting-items/setting-postage-options/simple-delivery?id=5575

Restricted or prohibited items  >  The following items aren't allowed to be posted with Simple Delivery  >  Valuables, such as jewellery, watches, and precious metals, including, but not limited to, jewels, watches, gems, precious metals, real pearls, silver, gold

I think a lot of sellers won't realise that such items are not eligible for cover if sent with Simple Delivery.

Until about two weeks ago, no jewellery was eligible for Simple Delivery so it was really straightforward and actually 'simple' for sellers to set their own postage based on the value of the item.

Then, with no notice, Simple Delivery became compulsory for lots of jewellery items, with exemptions for most under £20 Large Letters.

So, if I now list a 'cultured pearl necklace with a 9 carat gold clasp' (which would not be covered by SD), I get the message that Simple Delivery will override my domestic postage policy.

So, Ebay are saying I have to use SD, but the item I send won't be covered.

Can you check this out for the jewellery sellers, please?

It looks as if SD is now compulsory for fine jewellery, gold, silver etc. but such items are still excluded from cover because they are valuables.  This leaves jewellery sellers potentially facing claims with no ability to claim against the carrier or having to mess about to send without using SD.

I always thought with my post office head on that to send valuables eg Gold only Special Delivery By 1pm is the only service that covers such items. It wont be tracked etc as RM have reduced the compensation to only £75.

I’ve just checked and it’s £750 for Special Delivery. Just had a call from
eBay regarding why I can’t choose my own option for posting and that simple
delivery not covering jewellery and watches etc, he was very rude and said
I would get an email within 48 hours 🤷‍♀️
