I do not want to use simple delivery as too expensive for my small lightweight listings. How do I alter to Royal Mail  large letter 100gms

Sorry but you can only opt out of SD for letter items, not large letter.   And not all sub-categories are eligible.   In FAQs on here:

Right at the end it shows what can be excluded, however as you are selling all NEW items, selling as a private seller is not appropriate, and business sellers do not have to use Simple Delivery.
