Hi everyone, I posted a product that simple delivery was override, I was not able to use simple delivery, so I used another courier and I was not able to upload the tracking number, I don't know i was meant to mark as dispatched, the order has been delivered but it showed overdue to post on eBay and my account has been restricted.  How can I resolve this please

You can mark dispatched by opening the original Simple Delivery label (Get prepaid label > Get prepaid label and QR code).   It will remain unused and the cost will be automatically refunded to the buyer in 30 days (assuming they paid for it).

The option to change tracking number has been removed.   If necessary you would be able to add the new number to an "Item not received" case if one was opened.
