How do I increase the postage and get a new postage label on an item I have sold?

Assuming it's Simple Delivery you can't change the label.   You have to cancel/refund the transaction with the buyer's agreement (via the dropdown menu arrow for the item on your orders list) and relist with correct postage for the buyer to buy and pay again. 

The alternative would be to buy and pay for the postage yourself outside of ebay.

The problem is that you cannot ask buyer to pay more, so even with their agreement, cancelling sale does not mean they will buy again.

Simple Delivery is inflexible, just like ebay, but no doubt makes a lot of money, and loses money for a lot of sellers.
