I've joined ebay rrecently and have sold 8 items. For each item payment has been received promptly apart from the £340 item. Despite the fact that positive feedback has been received for the £340 item sold from the buyer Ebay is still keeping funds on hold for 2 weeks apparently. Hasanyone experienced the same?

This is normal ebay practice for new or returning sellers, and acts as safety net for both sellers and buyers in case transactions are disputed.
Payments can be released earlier in some instances if tracking shows ebay the item has been delivered.
The hold time can vary, and it isn't permanent, just until an account becomes more established.https://www.ebay.co.uk/help/selling/getting-paid/getting-paid-items-youve-sold/payments-hold-managed...

Has it happens to all new sellers.
The payment hold is a security measure, your previous smaller items showed delivery, but then an expensive item was sold, and this can raise red flags to eBay as it's often a sign the account has been hacked, cheaper items sent out as a 'practise run', then an expensive item sold, payment received , and the hacker has no intention of sending the item.
So here, eBay wish to see delivery. Yes, feedback helps, but for that expensive item, you must have had tracking? Enter that where you marked the item as dispatched, showing delivery, it should release your payouut for that item, sooner.

You used specisl deivery, didn't hou load the tracking onto ebay when you marked as didpatched, there are plenty of reminders, and then when tracking shows as delivered money would usually be released, but EBAY has to see the tracking.
