Hello,
I advertised a watch with eBay yesterday and have received 2 separate offers. I accepted the second offer however I am concerned the buyer has no ebay history and this me be a scam as now my watch is no longer listed for sale and I am missing potential buyers.
Any advice would be appreciated.
Thanks,

As soon as you accept an offer it is sold, and is no longer available to any other buyers.
To be honest at that value, you should have selected on your listing IMMEDIATE PAYMENT REQUIRED, then it would have stayed live until paid for.
Beware of any fake messages or requests to send to any address. The route now is via the Authenticator, who posts to buyer.

If you have accepted the offer and the item is no longer for sale, this indicates the buyer has paid. If an offer is accepted and no payment follows, the item remains for sale.
However be sure payment is made, have you received an eBay message / email that the buyer has paid and you need to post the item? Then, post only to the name and address eBay provide, on the delivery details for the item.

Is this the hub lot watch at 11 grand? It states it’s been sold. In your payment funds are or is the payment on hold? The item goes for authentication now not to customer.
however if as tressy mebtions you have no funds showing as on hold or otherwise on eBay hub the item has NOT been paid for so do not send it anywhere.

That's correct. it is marked as "waiting for payment" however now Sold and delisted. No funds on hold or otherwise!!

The buyer has 4 days to pay.
If they don't pay, you can cancel using the reason 'buyer did not pay'.
Once they pay, you should send the watch off to the authenticator.

Many thanks for all your help. I didn't realize an item would be delisted/sold prior to someone paying eBay!
